I find most pesto too oily. I want to taste basil, not oil and garlic. I start with this, then add more oil, cheese, or salt to taste. Grow some basil, make a bunch of pesto, and freeze some for winter pasta while watching the Godfather.

  • 2 cups basil
  • 2 tlbs pine nuts
  • 1 clove garlic
  • 1/4 cups ev olive oil
  • 3/10 cups parmesan cheese

  1. Process the basil, garlic, and pine nuts together until finely minced.
  2. Slowly add the olive oil and process until smooth.
  3. Add the cheese and process just a little to mix it all together.
